Today, the E2M team showed how to make a healthy Herb-Seared Salmon with Cauliflower Tabbouleh and Walnut Gremolata.

Herb-seared salmon with Cauliflower Tabbouleh & Walnut Gremolata

Herb seared salmon 4 (6oz-8oz) salmon fillets 2 tablespoons olive oil 1 lemon, zested 1 tablespoon salt ½ tablespoon black pepper, ground 1 teaspoon garlic powder 1 teaspoon dried basil 1 teaspoon dried thyme 1 teaspoon dried parsley 1 teaspoon dried oregano

Cauliflower Tabbouleh 2 -12oz bag frozen cauliflower rice 1 cup parsley, chopped ½ cup mint, chopped ¼ cup scallions, chopped 2 garlic cloves, minced 1 cup English cucumber, chopped ½ teaspoon salt 3 tablespoon lemon, juice 3 tablespoons olive oil

Walnut Gremolata 1 cup finely chopped toasted walnuts 1 cup finely chopped fresh flat-leaf parsley 1 tablespoon extra-virgin olive oil 2 teaspoons grated lemon zest plus 1 Tbsp. fresh juice (from 1 lemon) ½ teaspoon garlic clove, chopped (about 1 tsp.) ½ teaspoon kosher salt ½ teaspoon black pepper
